Cheese Storage
A great way to store your Artisan Cheese is in a Cheese Grotto which goes into the refrigerator. This is usually made out of birchwood; which is the traditional choice for preserving cheeses. Birch has been used as shelves for aging cheeses in caves, dating back hundreds of years. The bark would be wrapped around soft cheeses for ripening. Birch also adds a woodsy flavor and was made into barrels for the aging of Greek Feta.
